It’s Mother’s Day, and in case you have forgotten to buy mum a present, here are a few quick and simple ideas to show the most important woman in your life how special you think she is. Yes, they require a bit of time in the kitchen but they are sure to wow and delight mummy dearest.
- A breakfast treat. There isn’t a mother in the world who would not appreciate someone making her breakfast. To make pancakes, mix together one cup flour, two tablespoons sugar and one teaspoon each of baking powder and salt in a bowl. Make a well in the centre and add one egg, one cup of milk and two tablespoons of oil. Lightly grease a non-stick pan and drop a quarter cup on it; fry until brown on both sides and serve with maple or chocolate syrup, cream or fresh fruit.
- No bake dessert. Really want to wow your mum? Try this yummy chocolate-banana pudding. Boil two cups of cream in a saucepan; remove from the heat and add 140 grams (3/4 cup) of chopped chocolate and two tablespoons of icing sugar. Wait for five minutes and then mix. Take a square dish and layer with chocolate biscuits (any brand will do); pour half the chocolate mixture and then add a layer of bananas. Top with another layer of biscuits and chocolate mixture and refrigerate for two hours. Top with more bananas and serve.
- Just three ingredients. Don’t have a lot of time or ingredients? Try these Nutella brownie bites. Preheat your oven to 170°C; in a bowl, mix two eggs with one cup of Nutella until smooth. Add 10 tablespoons of flour and mix until just combined. Pour mixture in mini muffin cups and bake for 12 minutes until just set but still gooey.
